I use herbs for arrangements all the time. They grow so fast and need pruning so often, I find that I'm always knee deep in herb clippings. I do dry some of them for later use, but I still have more than I need, so I often find myself including them in fresh flower arrangements for their interesting color, texture and scent. Hardy herbs, like rosemary, thyme, lavender and mint even look good even after serval hours out of the water.

Always on the hunt for more creative ways to use up my extra herbs, I decided to throw together a pretty garland centerpiece for my dining table. Not only is this garland extremely easy to create, but you can make it as long and full as you like and mix and match your favorite herbs. Keep reading for the easy step-by-step instructions.

Cut a six-inch length of paddle wire.

Make Your First Bunch

Gather a small bundle of herbs together, wrapping the six-inch piece of wire around the stems to secure. Trim the ends of the stems until they're even. Repeat, creating several more individual bundles.

Start Your Garland

Lay out a length of twine, then place a bundle of herbs on one end, stems facing in. Make sure the tail of the twine goes a good way up the length of the stems, but not long enough so that it shows. With the wire still connected to the paddle wire base, start wrapping wire around the stems and the twine. Wrap about four to five times to make sure the bundle is secured to the twine. Do not cut the wire yet.

Lay the next bundle of herbs a few inches below the first, overlapping about halfway and off to one side. Wrap the paddle wire around the stems of the second bundle and the twine. Continue in this manner, alternating the direction of the bundles from left to right of the previous bundle, until you reach the desired length of garland.

Finish It Up

When you get to the end, lay the last bundle facing the opposite direction. Tuck the bundle's stems under the foliage of the last bundle and secure with wire. Snip off the excess wire and twine.
