Each year, my husband anxiously awaits the arrival of a certain fast food giant's green-tinted St. Patrick's shake. It’s the one throwback to his college days of fast food cuisine that he just can’t seem to leave behind. I, on the other hand, get more than a little skeeved out when I wonder what, exactly, is in that soft serve ice cream used to make the shake. A healthy remake of the cool, creamy St. Patrick's Day treat was in order.

This year, I went on a mission to create a healthy St. Patrick's shake - one so good, my husband would skip the fast food counter and stick with my version instead. It took a few tries to get the taste, color, and texture right, but I think I nailed it. 

The shake is good enough to drink as is for breakfast, but since I was going for the full effect, I added a squirt of whipped cream and a strawberry on top for effect.

  • 8 ounces milk (we’re lactose free, so I used homemade almond milk)
  • 1 big handful of baby spinach
  • 1 frozen banana, cut into 1-inch chunks
  • 1 teaspoon honey
  • 1-2 drops of peppermint essential oil or 1/2 teaspoon mint extract
  • 1/2 teaspoon vanilla extract

Combine all of the ingredients in a blender and blend well for 30 seconds, or until smooth. 

Top with whipped cream and a strawberry.
