How To Make a Good-for-You St. Patrick's Day Shake

Trying to eat healthier? Try this take on a St. Patrick's Day classic with all of the deliciousness and none of the guilt.

Each year, my husband anxiously awaits the arrival of a certain fast food giant's green-tinted St. Patrick's shake. It’s the one throwback to his college days of fast food cuisine that he just can’t seem to leave behind. I, on the other hand, get more than a little skeeved out when I wonder what, exactly, is in that soft serve ice cream used to make the shake. A healthy remake of the cool, creamy St. Patrick's Day treat was in order.

The shake is good enough to drink as is for breakfast, but since I was going for the full effect, I added a squirt of whipped cream and a strawberry on top for effect.

  • 1-2 drops of peppermint essential oil or 1/2 teaspoon mint extract
