Cucumber and Radish Crostini with an Herb Cheese Spread
At your next party serve this easy, inexpensive, healthy and best of all, tasty appetizer.
1 baguette, sliced
2 tbsp extra virgin olive oil
4 oz. pkg cream cheese
1/4 tsp garlic powder
2 tbsp cilantro, chopped
2 tsp chives, chopped
freshly ground black pepper, to taste
freshly ground sea salt, to taste
1 cucumber, sliced
4 radishes, thinly sliced
Preheat the oven to 350 degrees F.
Lightly brush extra virgin olive oil on each of the baguette slices. Place on a baking sheet and transfer to the oven to toast for approximately 10 minutes. Remove from the oven and allow to cool on the baking sheet.
Meanwhile, create the herb cheese spread by mixing together the cream cheese, garlic powder, cilantro and chives. Season the mixture with pepper and sea salt.
Spread the herb cheese spread onto the toasted baguette and top with a couple slices of radish and cucumber. Serve.
