    Rustic Stuffed Dinner Rolls

    Ingredients:

    4 store-bought dinner rolls
2 Tbs. extra virgin olive oil
    1/2 cup shredded gruyere
    1/4 cup grated parmesan
    chopped parsley for garnish
    salt

    Preparation:

Place store bought dinner rolls on a baking sheet. Then just cut an "X" shaped slot in the top of the rolls.

Drizzle the rolls with olive oil and stuff them with shredded cheese—gruyere is a good choice. It's a sweet and nutty Swiss cheese.

Sprinkle with grated parmesan, a pinch of salt and chopped parsley.

Simply warm them in the oven for approximately 3-5 minutes at 400 degrees until the cheese melts.

    Serves: 4

    Quickest Cranberry Corn Muffins

    Ingredients:

    1small pkg. corn muffin mix
1/2 cup canned or fresh sweet corn
1/4 cup dried cranberries, plus 2 Tbs. for garnish

    Preparation:

Mix the corn muffin mix according to the instructions on the package. Add 1/2 cup canned or fresh sweet corn and 1/4 cup dried cranberries.

The batter should be slightly lumpy—over beating makes muffins tough. Pour the batter into paper cup lined muffin tins and add a few cranberries on top of the batter for garnish.

Tip: If you like a nice crown on the top of muffins, let them rest for approximately five minutes before your bake them. That allows the baking properties to come out.

Bake as directed on the package.

    Serves: 6
