Flavorful Infused Oils- The first thing you need to do is decide on a flavor. Suggested fresh herbs to use are: rosemary, thyme, basil, tarragon, oregano, dill, chives or garlic cloves.
- Suggest spices: cardamom, star anise, juniper, coriander seeds or cloves.
- Next, you need to select a base oil. Less strongly flavored oils like sunflower and safflower oil work well. Extra virgin olive oil is also a good choice.
- To create and create an oil, wash and dry your choice of herb. Gently rub them in your hands to release the flavor.
- Place the oil in a clean glass container (figure A). Cover with warm oil, and seal tightly. Leave it in a cool place to infuseit takes about two weeks.
- Use for up to two weeks, longer if stored in the refrigerator.
- If using fresh garlic, use immediately and finish using within two weeks to avoid the possibility of getting sick.
