    Quickest Chicken Burritos
    Ingredients:

    1/3 to 3/4 of a store bought roasted chicken (3-4 lb), skin removed, meat shredded
    1 small bottle taco sauce, any brand
    1 pkg. taco seasoning mix, any brand
    1 small yellow onion, chopped
    2 Tbs. garlic powder
    2 Tbs. olive or vegetable oil
    1/4 cup water
    6 flour tortillas
    1 can refried beans, any brand
    4 oz. shredded Monterey Jack cheese
    4 oz. shredded cheddar cheese
    6 Tbs. chunky salsa (mild, medium, or spicy, to taste)
    6 Tbs. sour cream (or serve on the side)

    Materials:

    1 medium skillet
    tongs
    mixing spoon
    baking sheet
    aluminum foil
    serving spoons

    Preparation:

    Preheat your oven to 350 degrees.

    In a skillet, heat 2 tablespoons of olive oil and saute 1 small chopped yellow onion for two to three minutes. Then add 1/3 to 3/4 of the store bought chicken, shredded, 1 package of taco sauce, 1/4 cup water, 2 tablespoons garlic powder and 1 package taco seasoning mix.

    Saute for about two minutes until the mixture is heated through. Once the chicken mixture is hot, spread 1-2 tablespoons of warmed refried beans (all you need to do is heat them from the can, no additional preparation is needed) along with left half of the burrito, leaving room at the edges. Then spoon 2 tablespoons of the chicken filling on top of the beans. Sprinkle the shredded cheeses on top of the chicken filling.

    Roll the burrito up and place it on a foil lined baking sheet. Don't get caught up in whether you put the cheese or chicken in first--just get it all in there and roll it up. Once you have assembled all of the burritos, sprinkle the remaining cheese over the top.

    Bake them for 3-5 minutes until the tortillas are crisp and the cheese is melted.

    Garnish with salsa and sour cream.

    Chef's Note: The key to making this chicken burrito recipe as easy as possible is to have your ingredients well organized and ready to assemble. You can make the chicken filling a day ahead of time and keep it in the refrigerator so you are ready to go. It will save time if you use store bought roasted or rotisserie chicken. This recipe also works well with ground beef and it is good all by itself or with rice and a salad.
