    Salmon is a good way to expand your menu at home, and eat healthy. It’s high in the "good fats"...Omega 3 fatty acids. In this episode, Dr. Gourmet is cooking salmon with caper mayonnaise.

    Ingredients:

    Salmon
    1/4 cup reduced fat mayonnaise
    1 Tbs. vinegar
    Oil
    1/2 tsp. dried tarragon
    2 Tbs. lemon juice
    2 Tbs. capers
    2 Tbs. parsley

    Salmon

    • Preheat oven to 400 degrees and place large skillet in the oven.

    • Spritz oil on the salmon to keep it from sticking. Add the filets to skillet. By putting the fillets in a pan that is already hot, you can sear the bottom nicely.

    • Fresh or thawed salmon cooks about 10-minutes for every inch of thickness. You’ll know it’s finished when the flesh becomes opaque.

    • Remove the salmon from the oven, wait about five minutes and then garnish with your caper mayonnaise.

    Caper Mayonnaise

    • Blend together 1/4 cup reduced fat mayonnaise with two tablespoons parsley, 1/2 teaspoon dried tarragon, one tablespoon fresh lemon juice and two tablespoons capers.

    • Top salmon with the mayonnaise

    • Tip: Mayonnaise toppings work well on salmon any way you prepare it.

    Note: One serving salmon with caper mayonnaise has 215 calories and 12 grams of fat. This is a great example of where a recipe has a lot of fat, but is still good for you.
