    French Potato Croquettes

    Ingredients:

    4 small cold boiled potatoes, grated
    2 tbsp. butter
    3 egg yolks
    1/4 cup bread crumbs
    3/4 tsp. salt
    1/8 tsp. white pepper
    cayenne pepper
    shortening
    flour
    sour cream
    chives
    shredded cheese
    caviar

    1. Mix the first seven ingredients in the order listed above, and then beat thoroughly.

    2. Shape the mixture into balls, then in rolls—pointed at the ends.

    3. Roll in flour, and then mark in three places on top of each with a knife-blade to represent a small French loaf.

    4. Fry the rolls in shortening, and then drain on paper towels.

    5. Serve on a platter with small bowls of sour cream, chives, shredded cheese, and caviar as toppings.

    Brown Bread Canapés

    Ingredients:

    1/2 cup raisins
    1/2 cup dried cranberries
    2 cups buttermilk
    3/4 cup molasses
    1/4 cup melted shortening
    1 cup wheat flour
    1 cup white flour
    1 cup yellow corn meal
    1 tsp. baking soda
    1/2 tsp. salt
    cooking spray
    cream cheese
    sugared walnuts

    1. Preheat the oven to 350 degrees.

    2. Grease three 11 ounce cans without the plastic coating inside--such as a coffee can.

    3. Mix together dry fruit, buttermilk, molasses, and shortening.

    4. Sift together the dry ingredients, and then add to the fruit and buttermilk mixture,stirring until well blended.

    5. Pour into two greased 11 ounce cans, and then bake 45 to 50 minutes or until an inserted toothpick comes out clean when removed.

    6. Cool for 10 minutes, and then remove the loaf from the can to finish cooling.

    7. Slice into two inch slices, and then spread with cream cheese.

    8. Sprinkle sugared walnut pieces over the top.
