    Tuscan White Bean Dip with Crostini

    Ingredients:

    2 cloves garlic
    2 15oz. cans white beans, drained and rinsed
    1 tbsp. white wine
    1 tbsp. lemon juice
    1/2 tsp. salt
    1/2 cup olive oil

    1. Place garlic in a food processor, and then process until well minced.

    2. Add beans, wine, lemon juice, and salt to the minced garlic, and then process until pureed.

    3. With the processor running, slowly add olive oil in a steady stream through the feed tube.

    4. Process until the mixture thickens.

    5. Spoon the mixture into a serving dish, and then serve as a dip or spread with crostini which are thin slices of baguette brushed with olive oil and toasted.

    6. Store in an air tight container in the refrigerator.

    7. Bring to room temperature before serving.

    Makes about two cups.

    Olive Tapenade with Crostini

    Ingredients:

    1 cup each; pitted black olives, pitted green olives, and pitted brown olives
    1/4 cup finely chopped onion
    2 cloves minced garlic
    1/4 cup olive oil
    1 tbsp. cracked black pepper
    1 tsp. sea salt
    1/3 cup chopped oregano
    1 tsp. paprika

    1. Mix all of the ingredients together, and then serve.
