    Coconut Rice Pudding
    (Serves 4)

    Ingredients:

    1/2 cup Arborio rice
    1 cup water
    1 stick cinnamon
    1 cup coconut milk
    1 cup milk
    1 tsp. vanilla
    1/3 cup brown sugar
    1 cup roasted shredded coconut

    1. Mix the rice, water, and cinnamon stick together in a pot.

    2. Bring the mixture to a boil, reduce heat, and then simmer for 15 minutes.

    3. Remove the cinnamon stick, and then add all of the remaining ingredients except for the roasted coconut.

    4. Simmer for 20 minutes or until most of the liquid is absorbed.

    5. Serve hot or cold.
