    Mango Glazed Pork Tenderloin
    (Serves 4-6)

    Ingredients:

    1-1/2 pounds pork tenderloin

    Cooking Marinade

    1 mango
    1/3 red onion, chopped
    1 tbs. garlic
    1/4 cup orange juice
    1 tbs. course pepper

    Glazing Sauce

    2 tbs. butter
    1/3-cup mango juice

    1. Preheat the oven to 400 degrees.

    2. In a food processor, blend all of the ingredients except for the pork loin (figure C).

    3. Place the pork loin in a lightly oiled pain.

    4. Pour the mango puree over the pork loin (figure D, and then cover and cook for 20 minutes.

    5. Uncover, and then brush the glazing sauce over the tender loin.

    6. Cook uncovered for an additional 20 minutes.
