    Mahi Mahi Cevechi
    (Serves 6)

    Ingredients:

    6 martini glasses (chilled)
    12oz. mahi mahi cut into 1/4" pieces
    1/2 cup diced mango
    1/2 cup white onion, julienne slices
    1/4 cup red pepper, diced
    1/2 cup lime juice
    1/4 cup jalapeno, chopped
    1/2 cup cilantro, chopped
    6 sprigs cilantro
    1/2 cup roma tomatoes, diced
    4 slices of lime
    1 tsp. sea salt

    1. In a large bowl, mix all of the ingredients (figure A).

    2. Refrigerate (figure B) the mixture for 1-1/2 hours, gently mixing periodically.

    3. Spoon the mixture into a chilled martini glass, and then put the cilantro on top along with a lime on the side of the glass.
