    Horseradish Bay Style

    Ingredients:

    1 pound fresh horseradish root
    1 lemon
    1 tsp. salt
    Approximately 1/2 pint distilled vinegar
    1/2 pint jar

    Preparation:

    Peel horseradish root and cut into pieces. Place in a bowl and cover with water. Squeeze a lemon into the water and soak for 30 minutes, then drain.

    Chop horseradish in food processor until very fine. Spoon into half-pint jar, 2/3 full, top with salt and fill with vinegar to cover. Screw cap on tightly and store in refrigerator.
