Host Heidi Bohay asks a couple of celebrity chefs to share a few tips on preparing the menu for a party. Martin Yan, host of the television show Yan Can Cook, seeks to take the mystery out of cooking for his viewers. The purpose of his show is to share his skills and knowledge with as many people as possible. He says he developed his fast preparation style because he usually has little time and patience. He offers these tips to get you started on your own culinary adventure:

    • Eggrolls make a wonderful treat at any dinner party. Yan says you can stir-fry the vegetables and other fillings and then refrigerate them until you are ready to assemble the rolls. After the rolls have been folded, you can freeze them for up to a month. At the time of your party, simply pop them in the oven and serve.

    • A hot beef salad is a quick and easy dish to serve at your party. Combine some colorful mixed greens, chopped carrots, red bell pepper and jalapenos in a large bowl and refrigerate. At the last minute, quickly stir-fry the beef then add to the salad and serve.

    • Plan a menu that can be cooked at the same time. Bake one item in the oven while another is cooked in the steamer and yet another is being deep-fried.

Bohay also talks to chef Graham Kerr, author of Graham Kerr's Kitchen. In his previous book, he introduced us to his mini-max philosophy, a healthier, low-fat approach to cooking. In this newer book he takes his philosophy a step further. In order to cater to his fans at home, he sent out over 10,000 forms and asked people for their favorite foods. With the results of his survey, he created an assortment of recipes that reflect his viewers' favorite choices. He says the idea for the book was to access people's minds and put them onto the plate. When you know what one's favorite food is, you can interpret other recipes to fit that particular taste.
