    Caribbean Theme Trays for Passed Hors d' Oeuvres

    Materials:

    Two 15" silver trays
    Bamboo steamer
    Natural wood basket
    Large wooden tray
    Straw beachcomber hat
    Double stick tape
    Scissors
    Hot glue gun
    Hot glue sticks
    Sharp knife
    Rubber bands
    Floral foam
    Floral wire
    Wire cutters
    Medium size pineapple
    Orchids
    Anteriums
    Snap dragons
    Statice stems
    Bamboo stalks
    Pineapple leaves
    Banana leaves
    Bamboo vases
    Dipping bowls
    Three 12-inch high green sprouting bamboo stalks
    2 large green tropical leaves, flimsy, not fern, not accordion -- to cover pineapple tray Palm fronds
    12 banana leaves
    2 bunches salad savoy
    3 varied height (4", 6", 8" high) bamboo vases (about 2" diameter) with slanted tops
    Note: If you cannot find bamboo vases, you can use a regular size bamboo tiki torch and cut it into the sizes needs. Group the 3 vases together and tie them with raffia. Raffia
    Plastic wrap

    1. Line the inside of the straw beachcomber hat with plastic wrap and then fill with salad savoy. Place the shrimp on top of the leaves, with the bowl of dip down in the middle (figure A).

    2. Use a large wooden tray for the wontons. Cut banana leaves to fit the tray (figure B). Group the 3 bamboo vases together and tie with raffia. Attach the leaves and vases to the tray with heavy-duty tape. Fill the vases with tropical flowers (figure C). The Zesty Crab Salad in Wonton Cups and Pork Picadillo in Tortilla Cups can be served on this tray.

    3. Line the bottom of a bamboo steamer with plastic wrap and then fill it with floral foam. Cut and trim banana leaves to cover the top of the bamboo steamer. Cut two long and one short bamboo stalk and insert the long stalks into the floral foam (figure D).

    4. Use raffia to tie the short stalk to the other pieces like a limbo stick (figure E ). Wrap an orchid around the stalks for a colorful touch. Place the Jerk Chicken Skewers and Blackberry Brandy Dipping Sauce on top of the leaves.

    5. Cut the stems off palm fronds and place them on any type of circular platter or tray. Cut a pineapple in half, hollow it out, and place a piece of dry floral foam inside (figure F).

    6. Fill the foam with tropical flowers. Place your Aranitas around the palm fronds (figure G).

    Expert Tip: If you are want to do a tropical arrangement -- which are extremely popular flowers now -- there are birds of paradise that are orange and purple. Then you have the antheriums that can go from a white to pink to red. Tropical flowers give you really bright and vibrant colors. Mix some tropical leaves in with the flowers for a real tropical look.
