Ingredients:
Chicken salad spiced up with Dijon mustard, capers and dill Shrimp salad spiced with Cajun remoulade diced and red peppers Sandwiches garnished with strips of red peppers, yellow peppers cut into stars Black and green olives Breads --sun-dried tomato, marble rye, and flavorful focaccia For the crudite -- dart board, skewers, raw veggies, scissors
- Gourmet breads (figure A) like sun-dried tomato, marbled rye and flavorful focaccia provide a tasty complement to your salads.
Note: Debbie Lee, Culinary Expert, says there are so many ways you can pick something up at your local grocery, bakery or gourmet eatery and put in a beautiful platter or bowl and make it an incredible dish for your guests to enjoy. - You can use cookie cutters to cut the bread into the shape of game pieces (figure B).
- You can use the decorative toothpicks to add garnishes to the tops of your sandwiches -- like strips of red pepper with an olive in the center, etc. This helps keep your sandwiches in tact also. You can use the small cookie cutters to cut shapes out of different colored peppers -- i.e. make a star out of yellow pepper. Just use several different ingredients and garnishes (figure C).
- Place crudites (kroo di ta -- cut raw vegetables) onto bamboo skewers and insert them into a dart board (figure D) . This makes a unique crudite display. There are two keys to making this a real eye catcher, First think of the vegetables colors when you place them on the skewers. Tomatoes at the tops of the skewers catch your eye. Second, vary the size of your skewers.
- We did include one fun decoration on the dart board, that in a pinch you could eat -- scallions. To make the frilly ends curl up, cut the stalks in quarter inch strips (figure E) and place the scallion in ice water for a few minutes. It makes a decorative addition to the display.
