  • Ingredients:
    1 block (12 oz.) extra-firm tofu
    2 bunches scallions
    Vegetable or peanut oil for deep frying
    1 c. whole peeled garlic cloves
    1 sweet potato, cut into 1" cubes
    Hoisin sauce for dipping

    Steps:


    1. Place the tofu on several layers of paper towel to drain. Cut into 1" chunks.
    2. Trim the scallions and cut into 2" lengths.
    3. Pour enough oil in a deep fryer to reach the fill line (or about 5" in a deep pot). Heat to 360 degrees.
    4. Deep-fry the tofu until golden, then carefully add the scallions, garlic and potatoes to the hot oil with the tofu.
    5. Deep-fry for another 5 minutes.
    6. Remove the items to paper towel to drain.
    7. Serve hot with Hoisin sauce for dipping.

    Serves 8 to 12 as an appetizer.
