Ingredients:
1 block (12 oz.) extra-firm tofu
2 bunches scallions
Vegetable or peanut oil for deep frying
1 c. whole peeled garlic cloves
1 sweet potato, cut into 1" cubes
Hoisin sauce for dippingSteps:
- Place the tofu on several layers of paper towel to drain. Cut into 1" chunks.
- Trim the scallions and cut into 2" lengths.
- Pour enough oil in a deep fryer to reach the fill line (or about 5" in a deep pot). Heat to 360 degrees.
- Deep-fry the tofu until golden, then carefully add the scallions, garlic and potatoes to the hot oil with the tofu.
- Deep-fry for another 5 minutes.
- Remove the items to paper towel to drain.
- Serve hot with Hoisin sauce for dipping.
Serves 8 to 12 as an appetizer.
