    The first step in eating artichokes is to extract the leaves.

    Remove the leaves from an artichoke one by one and scrape the flesh off with your teeth. The leaves are good dipped in bearnaise sauce or butter; some people like to dip them in a ranch dip. When you've finished eating all the leaves, you'll find a fuzzy patch at the top of the leaves. Remove the patch to find heart of the artichoke -- the tastiest part. Cut it up and dip it, or mash it onto a cracker and dip it. It has a sweet and nutty flavor.
