Chili is one of those one-pot meals that's easy to make and always a crowd pleaser!Though you can make chili in all kinds of ways, when you start adding a lot of extra ingredients, you start adding calories. This recipe not only offers a different spin on flavor, but has a low calorie-count, too: it uses chicken instead of beef, and white beans instead of red beans.
Ingredients:1 lb. white northern beans Canola oil 3 large potatoes, peeled and cubed 1-1/2 cups chopped white onion 1 Tbsp. minced garlic 1 cup chicken stock 1 lb. cubed chicken breast 2 tsp. chili powder 1 tsp. Tabasco sauce 2 tsp. cumin 1-1/2 cups white wine 1 cup 1% milk 8 ounces low-fat cheddar cheese Fat-free sour cream (for garnish) Steps:
- Soak beans overnight in a bowl of cold water.
- Combine canola oil, beans, potatoes, onion, garlic and chicken stock in a large pot.
- Bring mixture to a simmer and cook for 30 minutes.
- Add the cubed chicken breast, chili powder, Tabasco sauce, cumin and white wine.
- Cook until beans are soft. About one hour.
- Add milk and four ounces of cheddar cheese. Heat through, but do not boil.
- Serve with fat free sour cream and low fat cheddar cheese as a garnish.
