  • Dr. Gourmet's White Chili
  • From "Ask DIY Cooking & Entertaining"
    episode DADC-113

Chili is one of those one-pot meals that's easy to make and always a crowd pleaser!

Though you can make chili in all kinds of ways, when you start adding a lot of extra ingredients, you start adding calories. This recipe not only offers a different spin on flavor, but has a low calorie-count, too: it uses chicken instead of beef, and white beans instead of red beans.

    Ingredients:

    1 lb. white northern beans
    Canola oil
3 large potatoes, peeled and cubed
    1-1/2 cups chopped white onion
    1 Tbsp. minced garlic
    1 cup chicken stock
    1 lb. cubed chicken breast
    2 tsp. chili powder
    1 tsp. Tabasco sauce
    2 tsp. cumin
    1-1/2 cups white wine
    1 cup 1% milk
    8 ounces low-fat cheddar cheese
    Fat-free sour cream (for garnish)

    Steps:

    1. Soak beans overnight in a bowl of cold water.
    2. Combine canola oil, beans, potatoes, onion, garlic and chicken stock in a large pot.
    3. Bring mixture to a simmer and cook for 30 minutes.
    4. Add the cubed chicken breast, chili powder, Tabasco sauce, cumin and white wine.
    5. Cook until beans are soft. About one hour.
    6. Add milk and four ounces of cheddar cheese. Heat through, but do not boil.
    7. Serve with fat free sour cream and low fat cheddar cheese as a garnish.
