 Potato Leek Soup with Smoked Salmon and Rye Croutons

Recipe Copyright 1999 Tyler Florence. All rights reserved. Ingredients: 2 Tbs. olive oil or vegetable oil 1 onion 1-1/2 to 2 cloves garlic, chopped 6 to 8 medium potatoes, diced 1 sprig fresh thyme, cleaned 2 quarts chicken stock 1 leek 1 cup heavy cream Salt and pepper 3 slices smoked salmon, julienned 4 slices rye bread Preparation: Over medium heat, saute onion and garlic with olive or vegetable oil in a 1-gallon stockpot. Add fresh thyme and sweat the mixture for 5 to 6 minutes, until the onions become translucent. Add diced potatoes. Cover with 2 quarts chicken stock and simmer until potatoes are soft, approximately 20 minutes. Puree with hand blender. Slice 1 leek into thin circles, fold into potato soup and simmer until leeks are soft but still bright green. Finish soup by adding 1 cup heavy cream and salt and pepper to taste. Cut circles out of 4 slices of fresh rye bread. Brush with olive oil and toast at 250 degrees until they dry out. Garnish with 3 slices smoked salmon, julienned. Pour potato leek soup evenly into 4 soup bowls and garnish with smoked salmon crouton and fresh parsley. Servings: 4 Note from Chef Jamie: "Sweating" is the process of cooking over very low heat so that food doesn't obtain any color from the heat and vegetables cook until they are translucent and tender.
