Ingredients: 2 Tbs. peanut oil 1 Tbs. butter 1 cup onions, chopped 2 Tbs. tomato paste 1 cup strained tomatoes 1/4 tsp. cayenne pepper 2/3 cup peanut butter 4 cups chicken stock (canned or homemade) Salt and pepper to taste Preparation: Set a 2-quart sauce pan over medium low heat. Add 2 teaspoons peanut oil (from natural peanut butter or bottled oil). Add 1 tablespoon butter and mix together. Add chopped onion to oil and butter and saute until translucent. Add 2 teaspoons tomato paste to saucepan and stir (the tomato paste will thicken the soup). Stir constantly so mixture does not stick to bottom of pan, keeping an eye on the heat. Add 1 cup strained tomatoes, 1/4 teaspoon cayenne pepper, and 2/3 cups of peanut butter. Add salt and pepper to taste. Heat to simmering, keeping temperature low. Add 4 cups of chicken stock (see following recipe). Stir continuously as it cooks. Simmer on low heat for about 15 to 20 minutes, stirring slowly. Serve with biscuits and garnish with fresh parsley sprig. Ingredients for Chicken Stock: 3 pound chicken 1 whole medium onion 4 stalks of celery with leaves Several black peppercorns Preparation: In a large pan, place chicken, onion, celery stalks and peppercorns. Add water to about 2 inches above the chicken. Bring to a boil. Simmer for approximately 2 hours, skimming fat from stock periodically.
