    Cioppino

    Cioppino (chuh-PEA-no) is a fish stew first made in California. It typically includes fish, shellfish, tomatoes, onions and wine. It is similar to the French fish stew, bouillabaisse.

    Tomato-Broth Ingredients:

    1/2 cup onion, sliced
    1/2 cup water
    5 ripe tomatoes, quartered
    2 sprigs fresh thyme

    Preparation:

    SautC) onions until soft; add remaining ingredients and simmer 10 minutes. PurC)e, then mix and strain into another pot. Set aside.

    Stew Ingredients:

    2 Tbs. olive oil
    2 stalks celery, bias cut
    2 yellow bell peppers, diamond cut
    1 red pepper, diamond cut
    1/2 onion, diamond cut
    1 Tbs. ginger, diced
    1 Tbs. garlic, diced
    1/4 tsp. chili flakes
    2 cups Pinot Noir
    2 cups orange juice
    2 quarts tomato base
    Salt and pepper to taste
    12 medium-sized scallops
    8 oz. fresh calamari tubes and tentacles
    1 whole lobster, cooked
    1 whole Dungeness crab, cooked
    12 fresh mussels

    Preparation:

    Heat olive oil in a one-gallon pot. SautC) all vegetables; add ginger, garlic and chili flakes. Simmer 10 minutes on low heat.

    SautC) and deglaze with the Pinot Noir. Increase heat and reduce by half (approximately 7 to 10 minutes). Add orange juice; let it reduce for 5 minutes.

    Add tomato broth and bring to a boil for about 1 minute.

    Reduce heat and simmer 30 minutes. Add scallops and calamari. Cook 2 minutes covered.

    Add mussels, cracked lobsters and crabs. Cover and simmer for 20 minutes (until the mussels open up).

    Add salt and pepper to taste. Garnish with fresh Italian parsley.

    Chef's Notes: Delicious served with sourdough bread and a side salad of mixed greens and teardrop tomatoes, along with thyme, rosemary and oil and vinegar dressing.
