Ingredients:
1/4 cup extra-virgin olive oil 6 medium sweet onions, sliced 2 Tbs. chopped garlic 2 Tbs. chopped fresh thyme 2 quarts chicken stock 1/4 cup melted butter Salt and pepper to taste
Preparation:
Heat olive oil in a deep pot over medium-high heat. Add the onions and cook, stirring occasionally, until onions turn a rich caramel color. Add garlic and thyme and cook approximately one minute, then add the chicken stock. Bring just to a boil and remove from heat. Place onion mixture, butter and salt and pepper in a blender. Puree then strain soup through a fine mesh strainer, and keep hot.
