    Green and Yellow Bean Bake

    Ingredients:

    4 cups fresh green and yellow waxed beans, stems trimmed and cut into 3 inch pieces -- blanched in boiling water for 1 minute and then cooled in an ice bath
    3 Tbs. butter
    1/2 yellow onion, finely chopped
    1 red bell pepper, cut into thin strips
    2 garlic cloves or to taste, minced
    2 Tbs. flour
    1 cup chicken broth
    3/4 cup heavy cream
    1/2 tsp. Worcestershire sauce
    Salt and pepper to taste
    8 oz. mushrooms, quartered, sauteed and drained on paper towels
    1 red onion, peeled and sliced into very thin rings
    2 cups flour
    1 tsp. onion powder
    1 tsp. garlic powder
    1/2 tsp. salt
    2 eggs
    1 Tbs. water
    1 cup panko (Japanese bread crumbs)
    Additional salt and pepper to taste
    Oil for deep frying

    Preparation:

    In a saute pan, melt 3 tablespoons butter. Add 1/2 finely chopped yellow onion, 1 red bell pepper cut into thin strips and 2 or more minced garlic cloves. Stir in 2 tablespoons flour to make a roux. Stir in 1 cup chicken broth and then 3/4 cup heavy cream. Add 1/2 teaspoon Worcestershire sauce and season with salt and pepper to taste. Combine 4 cups of fresh green and yellow waxed beans with 8 ounces quartered, sauteed mushrooms in a greased baking dish and pour the sauce over it. Bake at 350 degrees, uncovered, for 25 minutes.

    In a bowl, combine 2 cups flour, 1 teaspoon onion powder, 1 teaspoon garlic powder, and 1/2 teaspoon salt. In a separate bowl, combine 2 eggs with 1 tablespoon water and whisk. Slice 1 red onion into thin rings. Dredge onion rings in flour, then egg wash, then panko. Fry until golden brown and crisp. Drain onions on paper towels. Season with additional salt and pepper to taste. To serve, put bean bake in serving bowls and top with fried onions.

    Servings: 8
