Recipe courtesy David and Diana Potts of Milford, CA. Ingredients: Crisco shortening 1 large potato 1/2 yellow onion, sliced or coarsely chopped 3/4 cup sliced okra 1 cup cornmeal 1 cup sliced yellow crookneck squash or zucchini (or both) 1 sliced green tomatoes 3/4 cup bean sprouts Preparation: Over an outside open flame (campfire) or inside stovetop, take a large cast iron skillet, fill to 1/4" deep with Crisco and heat until hot enough to fry. Slice potato, French fry-style, and add to the skillet. When potatoes are halfway done, add sliced or coarsely chopped yellow onion. Slice okra and place in bowl or plastic bag with 1 cup cornmeal. Stir or shake to coat. Remove okra from bowl or bag and add to skillet. When okra is halfway done, add squash. When squash is halfway done, add green tomato. When tomatoes are halfway done, add bean sprouts. By now the potatoes, okra, squash and tomatoes should be done. Serve hot.
