    Chef Tracy Griffith shares a version of a Greek salad. You hydrate a bowl of bulgur wheat as above and stir in chopped cucumber, fresh chopped tomatoes, feta cheese, diced red onion, pitted kalamata olives and chopped fresh parsley. Drizzle with balsamic vinegar and stir to combine ingredients. Add cracked pepper and sea salt to taste for a delicious Greek Bulgur Wheat Salad (figure F).



  • Many people don't realize it, but corn is a grain. Throughout Europe, "corn" has long been the generic name for any kind of cereal grain. Actually, Native American Indians first presented corn to the world. Corn is available May through September. When you're shopping for corn, remember that the kernels should be milky and plump and grow all the way up to the end of the cob(figure G); the husk should be tight and light green, not yellow.
