    Hawaiian Rice Pilaf

    Ingredients:

    2-3 cloves garlic, chopped
    1/3 cup red pepper, cubed
    1/3 cup yellow pepper, cubed
    1 Tbs. butter
    1-1/2 cups long-grain white rice
    3 cups chicken broth
    1/2 cup golden raisins
    1/2 cup roasted macadamia nuts
    1/4 tsp. ground sage
    Salt to taste
    1 cup fresh diced pineapple
    1/4 cup parsley

    Preparation:

    Preheat oven to 375 degrees. Melt butter in a casserole dish; add long-grain white rice, stirring to coat with the butter. Add garlic, yellow and red peppers and chicken broth; bring to a boil. Add golden raisins, roasted macadamia nuts (you can coarsely chop the nuts or use them whole), ground sage and salt to taste.

    Place covered casserole dish in oven and bake for 18 to 20 minutes. When the dish is finished baking, remove the lid and add fresh diced pineapple and parsley and mix well.
