Ingredients for the Basic Mix: 4 cups red potatoes, diced (leave skin on) 1-1/2 sticks unsalted butter 1/4 to 1/2 cup heavy cream Dried potato flakes Salt and pepper to taste Preparation: Bring 4 cups of water to a boil and add diced red potatoes. Boil for approximately 15 minutes, until tender. Drain. In a mixing bowl, mix potatoes and butter with a hand mixer and gradually add the cream until the desired consistency is reached. Add more cream to thin and add more potato flakes to thicken. Salt and pepper to taste. Ingredients and Preparation for Variation #1: 1/2 basic mix 3/4 cup shredded cheddar cheese 10 medium roasted garlic cloves Add cheese and garlic to mix, and blend. Serve hot. Ingredients and Preparation for Variation #2: 1/2 basic mix 1/2 cup Gorgonzola cheese 2 to 3 Tbs. sun-dried tomatoes (pre-soaked), julienne sliced Add cheese and sun-dried tomatoes to mix, and blend. Serve hot.
