For a star mushroom, use a button mushroom and take the point of your knife and push in a star shape in the center of the top of mushroom (figure A).
For a cosmic look, take the point of the knife and apply it into the sides of the mushroom going around in a circle all the way to the end. The crimini mushroom is a great mushroom to create a turned mushroom. Use a curved bladed paring knife and make a slice and turn and repeat all the way around the mushroom (figure B).
Then, just slice the top off so that it gives it a nice clean look. Another technique is to cut a small V shape into the mushroom on the sides about every quarter of an inch. This will give the mushroom a unique appearance and is fairly easy to do. The enoki mushroom is unique and to make a nice garnish with it, just take a pitted olive and cut the bottom off so that it becomes a cylinder. Push the enoki's through. Cut the root end off and then they will stand up (figure C) and you have a great little garnishment.
The Portabella mushroom is easy to do. Just lay the mushroom down and cut across the mushroom in very thin slices. Place one slice down and then begin adding slices and go in a spiral motion (figure D).
For a white button marinade, slice the mushrooms thin and add chopped rosemary, fresh lemon juice and little bit of olive oil and toss it together. It is very light and delicate. Another marinade is to take shitake mushrooms and slice them thin and add finely chopped ginger and some soy sauce. Mix together and let marinade for an hour or two and you have a great little marinade.
