Ingredients: 1 package frozen chopped spinach, drained well 1 large onion, chopped 3 Tbs. butter or margarine 3 eggs 8 oz. feta cheese, crumbled 1 cup cottage cheese pepper to taste 4 medium red and yellow peppers, sliced vertically in half 1/2 cup Parmesan cheese, grated Preparation: Preheat oven to 375 degrees. Defrost spinach; drain well. Saute onion in butter until tender. Beat eggs; stir in spinach and mix well. Stir in feta cheese, cottage cheese, sauteed onions and black pepper to taste. Remove stems, seeds, etc., from peppers and cut in half lengthwise. Fill peppers with spinach mixture, place in buttered 13" by 9" casserole dish and sprinkle with Parmesan cheese. Bake in 375-degree oven for 30 minutes.
