    Red Potatoes

    Ingredients:

    3 lbs. red potatoes, lightly steamed or boiled
    2 Tbs.olive oil
    2 tsp. minced garlic
    2 Tbs. Parmesan cheese
    Salt and pepper to taste
    Fresh parsley to taste, chopped

    Preparation:

    Toss potatoes with olive oil, garlic, Parmesan, parsley, salt and pepper. Place in baking pan and bake in the oven at 350 degrees for approximately 35 minutes.

    Servings: 3 to 4
