 Roasted Potatoes and Olives

Ingredients: 5 potatoes, peeled and quartered 1/3 cup olive oil 1 clove garlic Salt and pepper to taste 1/3 cup kalamata olives, chopped Chopped parsley Preparation: Combine all ingredients except parsley. Place in a baking dish and bake at 350 degrees until brown. Before serving, sprinkle parsley on top.
