 Chicken Enchiladas, Chicken Stroganoff and Pineapple Chicken Rice

Ingredients:
2 Tbs. vegetable oil 3/4 cup cooked chicken, diced 2 cups cold cooked rice 2 green onions, diced 1/4 cup carrots, finely diced 2 Tbs. soy sauce Optional: 1 tsp. sesame oil 1 egg 1/4 cup canned pineapple, drained and diced Optional: pepper to taste
Preparation:
Heat oil, and add chicken, rice, onions, carrots, soy sauce and sesame oil (if desired). Stir-fry until hot -- about 2 minutes. Add egg and stir while cooking. Add pepper to taste, then add pineapple to warm rice and serve.
