    Ostrich With Pluot Sauce

    Ingredients:

    1-3/4 cups chicken broth
    1 cup couscous
    1/3 cup toasted walnuts, chopped
    2 Tbs. red bell pepper, finely diced
    1 Tbs. Italian parsley, minced
    Pepper to taste

    Preparation:

    Bring chicken broth to a boil in a small saucepan. Add remaining ingredients, and stir to blend. Cover and remove from heat. Let stand for 5 to 10 minutes, or until all the liquid has been absorbed. Fluff with a fork before serving.

    Note: A wonderful last-minute side dish, couscous requires little attention and works well with a number of complementary ingredients such as tomato, peppers, herbs, pesto, etc. Couscous is semolina grain that has been rolled, dampened and coated with fine wheat flour.

    Yield: 4 servings
