    Crab and Apple Coleslaw

    Ingredients:

    2/3 cup mayonnaise
    1 Tbs. rice vinegar
    1 Tbs. sugar
    2 Tbs. heavy cream
    Juice of 1 lemon
    Salt and pepper to taste
    1/2 head green cabbage, coarsely grated
    1/3 cup carrot, grated
    1/3 cup red bell pepper, thinly sliced
    1 green apple, unpeeled and diced
    1/2 lb. cooked crabmeat
    1/2 red apple, thinly sliced

    Preparation:

    In a large bowl, combine mayonnaise, vinegar, sugar, cream, lemon, salt and pepper. Add cabbage, carrot, bell pepper and green apple and toss. Next, add half the crabmeat and toss gently.

    Place portion on plate and top with remaining crabmeat. Garnish with apple slices.

    Yield: 2 servings
