Ingredients: 1 cup toasted hazelnuts, finely chopped 1/2 cup dry breadcrumbs 2 lbs. green beans 1 stick butter 2 Tbs. shallots, minced Salt & pepper, to taste Preparation: Combine nuts and breadcrumbs; set aside. Blanch green beans in boiling salted water for 2 to 3 minutes. Remove beans from pot and shock them in ice water to stop the cooking process. Drain well. Heat butter in a large sauté pan. Add shallots and sauté until tender. Add green beans, salt and pepper to taste and hazelnut mixture. Sauté several minutes to heat through. Serve immediately. Serves 12.
