    Chef Jamie's gravy is a tasty addition to the perfect turkey dinner.

    Ingredients:

    Juice from turkey roasting pan (discard giblets, etc.)
    1 cup dry sherry (or cider, if you prefer)
    1/2 cup flour
    2 cups chicken or turkey broth
    1/4 cup heavy cream
    Optional: Herbs, bacon fat or whatever seasonings you prefer

    Preparation:

    1. Pour pan drippings juice into a glass. Fat will rise to top. Once fat has separated from juice, remove 1/4 cup of fat from top of bowl and pour into a separate saucepan.

    2. Pour remaining pan juices back into roasting pan, leaving fat behind. Over low heat, scrape bottom of pan with a wooden spoon to incorporate all crunchy mixture into gravy.

    3. Add dry sherry or cider to roasting pan and stir. Let mixture simmer.

    4. Add flour to saucepan containing fat. Stir for a few minutes until a paste is formed (it's best to use a whisk to eliminate all lumps). This creates a roux, the French term for gravy.

    5. Pour roux into roasting pan, whisking constantly until gravy thickens. Add chicken or turkey broth, the cream and and whisk until gravy thickens.
