Ingredients for Shrimp: 1 pound large shrimp, cooked and cleaned 1/2 medium julienne sliced Vidalia onion 1/4 each cored, seeded and julienne sliced: red bell pepper, yellow bell pepper, green bell pepper 1 pound of fresh baby spinach Ingredients for Marinade: 1-1/2 cups peanut oil 3/4 cup white wine vinegar Salt and pepper to taste 1 tsp. pickling spice 1 tsp. dried red pepper Ingredients for Citrus Vinaigrette: 1 cup peanut oil 1/2 cup white wine vinegar Zest of 1 lemon Salt and pepper to taste Pinch of sugar Splash of cold water Preparation: Place 1 pound of fresh, cooked and cleaned shrimp in large bowl. Add 1/2 pound medium Vidalia onions. Core, seed and julienne slice 1/4 cup of red, yellow and green bell peppers and add to the bowl. For the marinade, whisk 1-1/2 cups peanut oil, 3/4 cup white wine vinegar, salt and pepper to taste, 1 teaspoon of pickling spice, and 1 teaspoon dried red pepper together. Pour this marinade over the shrimp mixture. Refrigerate overnight. To make the Citrus Vinaigrette, whisk together 1 cup peanut oil, 1/2 cup white wine vinegar, zest of 1 lemon, salt and pepper to taste, pinch of sugar and splash of cold water. Serve over 1 pound of fresh baby spinach. Select portions of the shrimp, peppers and onions and place on bed of spinach. Serve with Citrus Vinaigrette. Serves: 2 - 4 Chef's Notes: In the old days, cooks marinated shrimp and other perishables to give them longer shelf life. These shrimp may be stored up to 10 days, tightly covered in the refrigerator.
