There are a variety of ways to wrap and roll tortillas. Here are just a few: - Chocolate and Peanut-Butter Logs are easy to make and a delight to eat (figure A). Spread peanut butter on a tortilla, leaving about 1" of space around the diameter. Sprinkle with a strip of chocolate chips at one side. (Alternatively, you could use granola, marshmallows, etc.) Cut off a small portion of the curve just where the chocolate chips have been added; starting at the cut end, roll it up in a "log" and remove ends. Cut in half to make two logs.
- Another treat is Confetti Pinwheels (figure B). For our pinwheels we used tortillas of 2 different colors, shredded cheese, olives, red and yellow diced bell peppers, chopped parsley and cream cheese. Sprinkle a tortilla with cheese, olives and diced bell peppers. Top with a second tortilla (a different color, if you're using a variety) and spread with cream cheese -- you can use any flavored cream cheese of your choice, if you wish. Cut off the curves edges, roll the tortillas tightly and cut into 1" pieces. Remember: The sky's the limit when it comes to ingredients. Just use your favorites -- and try to make use of different colors and textures.
- You can easily make a Caesar Salad Wrap (figure C). All you need is your favorite Caesar salad mix and a few tortillas. Place salad in the center of a tortilla, fold the sides into a funnel shape and secure with a toothpick. This is a wonderful way to make an ordinary salad fabulous and unique.
- For a "tower" effect (figure D), place filling to the far right edge of the tortilla. Bring up the base of the wrap, then fold it over as if you're making a cylinder. Finish filling generously. Stand the wrap upright in a drinking glass or a mug to serve.
- For dessert, it's fun to serve an Ice-Cream Wrapwich (figure E). Make a cone out of a triangular sheet of brown parchment paper. Two corners will be left sticking up at the top. Fold these down to the inside of the cone and make a nice crease to hold it. This paper cone will hold the finished wrapwich and help protect from drips at the bottom. Next place a tortilla in the microwave for 5 to 7 seconds to loosen the oils (this makes the tortilla more malleable) -- you can use a flour tortilla or a cocoa-flavored tortilla. Spread with caramel sauce; sprinkle with toffee crunch topping and add a couple of scoops of ice cream. Fold the base of the tortilla up over the ice cream and fold it over from left to right, creating a cone (make sure to wrap tightly so that the ice cream doesn't ooze out). Top it off with another scoop of ice cream with another sprinkling of the toffee crunch. These can be made ahead of time and placed in the freezer. You can use any combination of flavors you desire.
