Ingredients: Red and yellow bell peppers Eggplant Zucchini Onions, Portabella mushrooms Carrots Olive oil 3 Tbs. balsamic vinegar 1/2 cup olive oil 1 Tbs. Dijon mustard Salt and pepper to taste 1 tsp. thyme 1 tsp. sumac 1 clove garlic, crushed Pita bread Mozzarella cheese slices Preparation: Cut the vegetables long and thick, and toss with a little olive oil. Place on grill or pan sear them. Ingredients for Marinade: 3 Tbs. balsamic vinegar 1/2 cup olive oil 1 Tbs. Dijon mustard 1 tsp. thyme 1 tsp. sumac 1 clove crushed garlic Salt and pepper to taste Whisk the ingredients and then toss the vegetables together with this marinade. Just fill the pita bread with the vegetables and thick slices of mozzarella. Place on grill and cook until the cheese oozes out the sides.
