Ingredients: 1/2 cup mayonnaise 1/4 cup basil leaves chopped Juice of 1 lime 1 medium zucchini 1 red, yellow or orange bell pepper, quartered 2 red onion slices, about 1/4" thick Olive oil Salt and pepper 2 cups Romaine lettuce, shredded 1/2 lb. fontina cheese, grated 2 large flour tortillas Preparation: In a small bowl combine mayonnaise, basil and lime juice, stirring to blend. Brush vegetables with olive oil and season with salt and pepper. Arrange on a medium-hot barbeque and cook 2 to 3 minutes, or until grill marks appear. Flip over and grill an additional 2 minutes. Spread mayonnaise mixture on tortillas. Place lettuce on tortilla and top with cheese and vegetables off the grill. Roll the tortilla like a burrito. Yield: 2 servings
