    Mandarin Orange Salad


    Endamame

    Ingredients:

    1 pkg. frozen endamame
    1 cup water
    Kosher salt

    Preparation:

    Although it has a funny name, edamame is little soy beans. Sometimes they are labeled baby soy beans. It is a very popular item today in Japanese restaurants. They come frozen and can be microwaved. Be sure and follow the package directions for the amount you are making.

    Cook the edamame for approximately 3 minutes in microwave proof bowl with a cup of water. Thoroughly drain the water off and then salt them. Just place them in decorative bowls and set them around the party area (just like you would at a cocktail party) for people to snack on. Place another bowl beside each bowl to be used for the discarded pods.


    Glass Noodle Salad and Red Wine Dressing

    Ingredients for Glass Noodle Salad:

    1 pkg. glass noodles
    1 can baby corn, drained
    1 carrot, julienned
    1 Tbs. cilantro, roughly chopped
    One 3 oz. pkg. straw or enoki mushrooms
    1 cup blanched sugar snap peas

    Preparation for Glass Noodle Salad:

    Pour hot, but not boiling water over the noodles. They will cook while they are sitting in the hot water -- it takes approximately 8 minutes. Rinse and thoroughly drain the noodles.

    Ingredients for Rice Wine Dressing:

    1/4 cup rice wine vinegar
    2 Tbs. sesame oil
    1/4 cup olive oil
    Juice of 1 fresh lime
    1 Tbs. sugar
    Salt and pepper to taste
    1 Tbs. black sesame seeds
    Cilantro

    Preparation for Rice Wine Dressing:

    Combine ingredients well and emulsify with a wire whisk, pour over noodles and vegetables and toss gently. Refrigerate for at least 2 hours, tossing occasionally, before serving. Garnish with cilantro.

    Note: Chilling cold dishes for 12 hours enhances the flavor.


    Asian Green Bean and Chicken Salad

    Ingredients:

    1 lb. blanched, tender green beans
    1 lb. poached white chicken breast, cut into small pieces
    1/4 cup slivered almonds
    1/2 cup red pepper cut into strips
    1 bottle of your favorite Thai peanut dressing

    Preparation:

    Combine the green beans, chicken almonds and red pepper in a large bowl. Add bottled dressing to coat. Chill for 2 hours before serving.


    Mandarin Orange Salad

    Ingredients:

    1 small can mandarin oranges, drained well
    One 6 oz. carton button mushroom slices
    1 large bag pre-washed baby spinach
    1 bottle of your favorite Thai ginger dressing

    Preparation:

    Combine the spinach, mandarin oranges and mushrooms in a large salad bowl. Toss with ginger dressing to coat right before serving or serve on the side.
