    Wrapping with the Chick

    Ingredients:

    1/4 cup walnuts, chopped
    3/4 lb. chicken breast
    1 tsp. olive oil
    1/2 tsp. kosher salt
    1/4 tsp. cracked black pepper
    1/4 cup Roquefort cheese
    1/4 cup blue cheese dressing
    1/3 cup dried cherries
    1/4 cup finely diced celery
    2 cups arugula
    4 or 5 10" spinach or flour tortillas

    Preparation:

    Bake walnuts at 350 degrees for approximately 10 minutes, until they are a crisp, golden brown.

    Dice chicken into 1" cubes. Heat olive oil in a saute pan; add chicken cubes sprinkled with kosher salt and cracked black pepper and cook until done. Set aside.

    In a mixing bowl, combine Roquefort, blue cheese dressing, dried cherries and diced celery; add chicken pieces, walnuts and arugula and mix thoroughly (mixture can be made ahead of time and refrigerated until needed).

    Heat tortillas; top each with approximately 1 cup mixture. Fold right and left sides over to the middle; roll up base. Place seam side down on serving plate.
