    Kristi Conroy is an actress and businesswoman who loves to entertain along with her boyfriend. Collaborating on the preparations and menu makes each occasion memorable, and they like to spark new friendships by inviting people who don't know one another. Serving fun dishes that their guests don't usually see at parties further enhances their festivities.

    One of Conroy's favorite party dishes to serve to her guests is sushi. It can be served as an appetizer or as a main course, and you don't have to be an expert to make it. Sushi is extremely versatile, as not all of it is made from raw fish. Vegetables and cooked fish can also be used with delicious results. Use your imagination with the filling, and if you do use raw fish, make sure that it is extremely fresh. Conroy shows us how to make California rolls and notes that the rice and seaweed can be found in the Asian food section of the supermarket or at an Asian food store.

    Ingredients:

    Asian-style rice coated with glucose
    Seaweed sheets
    Imitation crab, precooked and sliced lengthwise
    Avocado, sliced lengthwise
    Cucumber, sliced lengthwise

    Preparation:

    Boil rice for 45 minutes; let cool somewhat.

    Lay seaweed out on a paper towel and spread cooked rice over it with a spoon (figure A). You want the rice to be barely warm to the touch; otherwise, if you let it cool too long, it will be too sticky to spread evenly.

    Arrange the sliced imitation crab and vegetables near one end of the seaweed and roll tightly. This may require a bit of practice, but the glucose and the moisture from the rice make the seaweed less brittle and easier to roll (figure B).

    Use a very sharp knife to slice the roll into bite-size pieces. You want to prevent the seaweed from falling apart so the pieces will look uniform. Conroy recommends using a bread knife.
