    Confetti Tamale Ring

    Ingredients:

    1 lb. ground beef
    1 medium red onion, chopped
    1 can diced tomatoes
    1 cup black olives, sliced
    One 6 oz. can tomato paste
    One 11 oz. can corn, drained
    1/2 green bell pepper, sliced and chopped
    1 Tbs. chili powder
    1 tsp. salt
    2 pkgs. Crescent roll dough
    8 oz. shredded cheddar cheese
    Shredded lettuce
    Cherry tomatoes

    Preparation:

    Brown the ground beef in a skillet and add the red onion. Drain the ground beef mixture and then add the can of diced tomatoes and the sliced black olives. Stir and mix and then add the tomato paste, corn, and green bell pepper. To finish it off, add the chili powder and salt. Let this cook for approximately 10 to 15 minutes. Let it come to a boil and then simmer.

    To prepare the ring, separate the crescent rolls from each other. Lay the triangles around a pizza pan into a circle, with the large corners touching. Place a large tablespoon full of the meat mixture in the center of the large end of the triangle. Sprinkle some shredded cheddar cheese on top of each spoonful of mixture. Fold the remainder of the dough over the top of each spoonful of mixture and press down a little to hold. Bake the ring at 375 degrees for approximately 20 minutes.

    Place these triangles on a tray with a bowl of salsa in the middle. Alternate some shredded lettuce and shredded cheese around the tray. Add some cherry tomatoes.
