When you open the jar, make sure there's nothing floating on the top. If there is oil floating on the top, it hasn't been turned and the eggs have not been oiled properly. When this happens, the eggs tend to dry out and lose their flavor. Caviar can be stored in the refrigerator or kept on ice. An opened jar should eaten at once if possible and should not be refrigerated for more than two or three days. Refrigerated caviar should be turned every day to keep the eggs oiled. Caviar is always served in a glass dish (figure A). Many people like their caviar served with lemon and scallions on top. Vodka and caviar are usually served together.
