Professional chefs frequently have an assortment of specialized tools and gadgets at their disposal. Many, however, get by with a surprisingly small number of key cooking tools and utensils -- a good saute skillet, a couple of sharp knives, and a few essential cooking pots and pans. Whether you're a pro or a novice, there are a few items that nearly every kitchen should have. Here are three that Chef Paul Sturkey recommends highly. A good knife sharpener (figure A). Make sure that you have a sharpener that works on plain, straight blade as well as serrated blades. These simple devices provide a reasonably sharp edge to kitchen knives simply bypulling the blade back-to-front through the notched opening. Even strokes and even pressure are key when using this device.
A good instant-read pocket thermometer (figure B). Get one that has large numbers that are easy to read from a distance. Some come with sleeves with printed guidelines for cooking various meats to different levels -- rare, medium or well-done.
A pastry bag (figure C) is not just for decorating cakes. You can also use them for a number of other purposes including stuffing fowl and creating a nice presentation for mashed potatoes.
