    Cheeseburgers will go from everyday to gourmet if you tuck a square of your favorite cheese in the center of each meat patty and wrap the meat over the cheese.



    For another great idea, give flank steak a whole new look by serving it as a roulade (roo-LAHD). (Roulade is the French term for meat rolled around a filling.) Carefully butterfly the steak with a sharp knife and arrange a colorful stuffing down the center (figure A). (Dense vegetables such as carrots should be blanched.) Fold over each side of the steak to create a roll.



    Secure by looping kitchen twine around the roulade (figure B). Roast until cooked through, then slice for a different and delicious take on flank steak (figure C).
