    Here's a way to use up any leftover risotto you may have: Spread it in a cookie sheet and refrigerate overnight. Remove from the refrigerator and use a cookie-cutter (or the top of a drinking glass) to cut out cakes. Brown them on both sides in a bit of oil, then serve over your favorite tomato sauce, topped with grated cheese and a sprinkling of chives and pepper.
