    Spaetzle

    Note: Spaetzle (SHPEHT sluh) is a dish of tiny noodles made with flour, eggs and water or milk.

    Ingredients:

    1 spaetzle maker (can be found in houseware stores and specialty cooking stores)
    5 large eggs, the fresher the better
    1 tsp. salt
    4 cups flour
    3/4 cup water
    1/4 cup milk

    Preparation:

    Whisk 5 large fresh eggs in large bowl. Add 1 teaspoon salt to the bowl and whisk again. Slowly add 4 cups flour to bowl, mixing as flour is added. Add 3/4 cup water and 1/4 milk to the mixture. Mix vigorously for 5-10 minutes until mixture pulls away from the side of the bowl and small air pockets or bubbles form in the dough as you are mixing.

    Boil large pot of water. Place the spaetzle machine over the top of the pot. Fill cavity of the spaetzle maker with the batter. Reduce heat under pot to medium. Slide top of spaetzle machine back and forth allowing batter to drop into boiling water. For smaller spaetzle, move spaetzle maker faster over the pot, for larger spaetzle, move spaetzle maker slower. Increase heat under pot so water returns to a boil. Simmer spaetzle for 10-12 minutes. Remove spaetzle with a strainer and place in a bowl of cold water to stop the cooking process.

    Serves: 4
